GF, DF, V and No Bake Chocolate Mousse by Andrea Solomun

The perfect decadent, light, gluten-free, dairy-free, vegan, no-bake dessert. The second recipe in a series by Andrea Solomun! INGREDIENTS

Base ingredients

300g silken tofu

1/4 cup cacao powder (I used 2 tbsp)

2 dates (or another sweetener of your choice)

Optional base flavours: vanilla powder/cinnamon/orange powder…

OR add one of these options to the base:

80-100g dark or vegan chocolate (melted and cooled slightly)

1/2 an avocado (medium sized)

100g Greek soy yogurt (or cottage cheese – super high in protien)

Toppings

The choices are endless, choose what you love, (Alive’s tip: choose seasonal produce for the BEST flavours), here are some I am loving:

Figs

raspberries

chocolate nibs

plain yogurt

coconut yogurt

Nuts of your choice – go nuts!

METHOD

Put all the base ingredients into the blender and mix well until it is smooth.

Divide the mixture into glasses or bowls and top it with whatever you like.
I noticed avocado goes great with figs, greek soy yogurt with frozen berries and pollen, and dark chocolate with Greek yogurt and nuts, but you can pick your preference.
Leave it in the fridge for at least 2h to thicken up even more
