Especially with my tasty pink beetroot pasta recipe, which is not only stunning to look at but also incredibly easy to whip up. INGREDIENTS

250g pasta of your choice. Magda used this, but we also love this Gluten Free Fettuccini

1 red onion

1 garlic cloves

30g walnuts

30ml (plant-based) cuisine like tempe

250g diced beetroot

Salt

Vegetable broth powder (We love this mushroom broth powder)

Oil

Vinegar

Toppings of your choice such as (vegan) cheese, herbs, walnuts

METHOD

Cook the pasta according to the packaging

Meanwhile prepare the pesto: Fry the onion and garlic in a pan until they’re golden

Blend the onions and garlic with the chopped walnuts, beetroot and cuisine

Season to taste with salt, vegetable broth powder, oil & vinegar

Mix the pasta with the pesto and garnish with toppings of your choice such as (vegan) cheese, herbs, walnuts
